Delicious & warming beef soup to warm you up from the inside

November is here, it has cooled off in Vienna, it’s cold and grey and you see lots of people coughing and sneezing in the streets (always makes me feel slightly uncomfortable). So I thought what would be better for this kind of season and weather and health than a warming, strengthening beef soup?!

It’s a super easy recipe, has lots of veggies in it, beef for protein and power and one secret ingredient – sherry – which just rounds up the flavors perfectly and makes you feel warm and comfortable from the inside 🙂

I don’t have much more to say, except that this is an easy, delicious, healthy fall recipe that will make you and your family and friends very happy! 🙂

So let’s get started!

Serves 6

Ingredients

400g beef for boiling
1 onion, peeled and chopped
500g root vegetables (carrots, yellow turnips, celeriac and parsnip in equal parts), finely cubed
100g leek, finely sliced
100ml dry sherry
one stalk of parsley, finely chopped
10 pepper corns
salt
a lug of vegetable oil
some chopped chives (optional, for serving)

Method

1. Heat a lug of vegetable oil in a large pot. Then add chopped onion and cubed beef and roast until brown. Add the rest of the vegetables and braise until they start to become soft.

2. Add 2l of water, the pepper corns and salt and bring to boil. Remove the foam that forms on top of your soup continuously and let simmer until the meat is soft and falls apart easily in your mouth. This while take at least an hour or so. Add more water when required.

3. Right before serving, add the sherry and bring the soup to boil once again so the alcohol can evaporate. Serve with some freshly chopped parsley or chives.
